The inaugural Dr. Edge 'Tasmania' Chardonnay is a blend of Derwent Valley (70%) and Tamar Valley (30%) fruit. 2018 marks the first year of pressing juice direct to 225L seasoned French oak barriques. The juice was fermented naturally, matured for 9 months on lees. Glass demijohns also held around 10% (by volume) whole Chardonnay fruit clusters for fermentation and maturation.
